01 / What it is

Spirulina is not a supplement.
It is a crop.

It is a microscopic blue-green filament, and it has been food for a very long time — lifted off lakes in Chad and in the Valley of Mexico centuries before anyone thought to call it a superfood.

What it does, it does by density. Roughly two-thirds of its dry weight is protein. The rest carries iron, B-vitamins and phycocyanin — the pigment that makes it blue under a lens and green in a pond, and the first thing careless drying destroys.

It needs sunlight, water and a little alkalinity to grow. In coastal Andhra we have a great deal of the first two, and the third we manage ourselves.

03 / In the pond

Everything that happens to it happens the same day.

Harvest is in the morning, while it is cool. By the afternoon the batch has been washed, pressed, and sent one of two ways — into a chill box, alive, or into the dryer. There is no warehouse in the middle of that sentence.

Spirulina is grown in water, so water is the thing to control. That is convenient for us, because the company next door tests water for a living: Ushara Aqua Labs is a water-testing laboratory, run by the same family, on the same site.

It is a separate business with its own clients — but it is where our source water goes before a pond is inoculated, and where a sample from every batch goes before anything is dispatched. We are not sending our own homework out to be marked. We are just fortunate to have a lab in the family.
